The first production based on my proto-type Japanese-style cooking knives. This Santuko has a thin, 1/8" blade, perfect for all your chopping needs! This thin blade and flat edge of the Santuko design, makes chopping and mincing vegetables a breeze. The chisel ground blade and razor edge have been polished off with extremely fine grit Japanese water stones and is sure to satisfy all of your cooking needs. Watch your fingers on this one!!
